Marinated Swordfish with Stir Fried Vegetables

Ingredients
1 x 170 - 200g Swordfish
Toasted Pine Nut Oil
1/4 Red Pepper - Sliced
1/4 Yellow Pepper - Sliced
1/4 Green Pepper - Sliced
1/2 Courgette - Sliced Lengthways
1/2 Red Onion - Sliced
15g Toasted Pine Nuts
Chopped Coriander

Method
Place the Swordfish in to a bowl with some sesame oil and leave for 1 hour
Heat a chargrill pan until smoking hot and then add the Swordfish, cook for 2 mins each side, turning to give a criss-cross effect on the fish
Warm a little olive oil in a wok, add the peppers, courgette and red onion. Cook until just soft, then add the toasted pine nuts
To serve the dish, place the stir fried vegetables in the centre of a clean plate and place the Swordfish on top
Garnish with freshly chopped coriander
